Paleo Breakfast Muffins

Paleo Breakfast Muffins

Ingredients
- 1 pound breakfast sausage
- 1 onion
- 2 bell peppers red and green
- 1 bag of spinach
- 1 package of mushrooms
- 3 tomatoes
- 17 eggs
Instructions

Preheat oven to 350.

Brown the sausage in a pan, strain and set aside.

Chop veggies and Sautee with coconut oil, S&P and garlic.

Beat the eggs- (I started with 14 eggs, but ended up having to beat 3 more after)

Spray 2 muffin tins with coconut oil.

I started with the sausage and evenly distributed it between each tin, then added the veggies. Poured the egg over it and let it settle, tapped the pans down a few times so the air bubbles would rise.

Bake for 30 minutes
