Paleo Breakfast Muffins

Ingredients

  • 1 pound breakfast sausage
  • 1 onion
  • 2 bell peppers red and green
  • 1 bag of spinach
  • 1 package of mushrooms
  • 3 tomatoes
  • 17 eggs

Instructions

  1. Preheat oven to 350.

  2. Brown the sausage in a pan, strain and set aside.

  3. Chop veggies and Sautee with coconut oil, S&P and garlic.

  4. Beat the eggs- (I started with 14 eggs, but ended up having to beat 3 more after)

  5. Spray 2 muffin tins with coconut oil.

  6. I started with the sausage and evenly distributed it between each tin, then added the veggies. Poured the egg over it and let it settle, tapped the pans down a few times so the air bubbles would rise.

  7. Bake for 30 minutes
